I’ve cracked the code for the perfect chocolate cake.
In my opinion, chocolate cake is the most difficult flavor of cake to purchase and make. Too often bakeries make them sickeningly sweet, overly rich, or crumbly and dry. I find a similar problem with brownies as well - it’s quite tough to find a brownie that is perfectly moist, not too cake-y and not too fudgy, with the perfect density that befits a brownie.
Good chocolate cake is hard to find. There are only two bakeries — in the world! – where I’d actually purchase chocolate cake, and I’ve kissed a lot of frogs to find the ones (Mia’s Bakery in Brooklyn and Empire Cakes in Chelsea, both in New York), but I have finally found the perfect at-home chocolate cake recipe.
Enter The Best Chocolate Cake Recipe Ever.
Yup. That’s the exact name of the recipe — and it doesn’t lie.
I first discovered this recipe over a year ago, when I made Zoe a cake for her birthday (see above). I was looking for something that was less complicated than the cake recipe for my chocolate whoopie pies (this is also banging good cake, but has a lot more complexity and takes way longer to make).
For Zoe and Joe’s engagement party, I offered to make them a dessert (this has become my brand #brandstrategist) and this chocolate cake got the top vote.
The Best Chocolate Cake Recipe Ever more than lives up to its name. Many people at the party came up to me to rave about the cake (not just out of politeness you naysayers), and Zoe later told me that people came up to her to gush over this chocolate-y goodness. In fact, one partygoer told me that he normally never eats (buys or makes) chocolate cake since it’s so hard to get right, but since it was a party he decided to give it a try and was completely blown away.
